The old Korean BBQ ranking had a category problem and a coverage problem. It
put a Northeast Chinese/Korean charcoal hybrid at #1, treated a local chain's
familiarity as proof, and barely looked beyond Convoy. This rebuild fixes all
three without pretending geography alone makes a restaurant good.
We screened 52 distinct concepts across San Diego County and deep-reviewed 24.
Branches, aliases, closed predecessors, and former tenants did not pad the pool.
Every finalist was checked at its exact address; Google and Yelp were both
attempted directly; current positive and negative patterns were read; and first-
party menus controlled prices, rules, and hours wherever they were available.
Review counts establish confidence. They add zero ranking points.
The locked category is a current restaurant with a real Korean tabletop
meat-grilling program. AYCE and à-la-carte both qualify. Kitchen-cooked bulgogi,
tofu houses, Korean pubs, hot-pot-only rooms, Japanese yakiniku, and restaurants
using “BBQ” loosely do not. The Fire Spot is a very good Korean-Chinese hybrid;
calling it pure KBBQ to preserve an old #1 would be worse than leaving it out.

The ranking uses execution, consistency, category fit, distinctiveness, value,
service and logistics, and local relevance. Multi-location brands remain
eligible but can never take #1. That rule did not need to move SOT — it already
